Ingredients (Serves 6)
For the pudding batter:
1 cup all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup granulated sugar
2 tbsp unsalted butter, melted
1/2 cup whole milk
1 tsp vanilla extract
For the butterscotch sauce:
1/2 cup packed brown sugar
2 tbsp unsalted butter, melted
1 1/2 cups hot water
1/4 cup golden syrup or light corn syrup
Instructions
Prepare the batter:
Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a medium-sized baking dish (about 8x8 inches) and set aside.
In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.
Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined, ensuring not to overmix. The batter should be thick and smooth.
Assemble the pudding:
Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
In a separate bowl, mix together the brown sugar, melted butter, hot water, and golden syrup until the sugar is mostly dissolved. Carefully pour this mixture over the back of a spoon and onto the batter, ensuring itโs evenly distributed. Do not stir!
Bake the pudding:
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the edges are bubbling. The sauce will form underneath the cake layer as it bakes.
Serve and enjoy:
Remove the pudding from the oven and let it cool for 5-10 minutes. The sauce will thicken slightly as it cools.
Serve warm, scooping out portions to reveal the luscious butterscotch sauce underneath. Pair with vanilla ice cream or whipped cream for an extra treat.
