Crispy Fried Cornbread
Ingredients:
1 cup cornmeal
1 cup buttermilk
1 large egg
1/2 tsp baking soda
1/2 tsp salt
1/4 cup chopped green onions (optional)
Vegetable oil for frying
Directions:
In a mixing bowl, combine the cornmeal, buttermilk, egg, baking soda, and salt. Stir until the mixture is well blended and smooth. If desired, fold in the chopped green onions for added flavor.
Heat a generous amount of vegetable oil in a skillet over medium heat. Once the oil is hot, drop spoonfuls of the cornbread batter into the skillet, flattening them slightly with the back of the spoon.
Fry the cornbread until golden brown and crispy, about 3-4 minutes on each side. Once cooked, remove them from the skillet and place on paper towels to drain excess oil.
Serve warm as a delightful side dish or snack.
