Savory Garlic Mushroom Chicken with Spinach
Ingredients:
4 boneless, skinless chicken breasts
2 cups sliced mushrooms (cremini or button)
2 cups fresh spinach
3 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream
2 tbsp olive oil
1 tsp dried thyme
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Instructions:
Season chicken breasts with salt, pepper, and thyme.
Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5-7 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add garlic and mushrooms. Sauté for 3-4 minutes until mushrooms are soft.
Pour in chicken broth and heavy cream, stirring to combine. Simmer for 2-3 minutes.
Add spinach and cook until wilted, about 1-2 minutes.
Return chicken to the skillet, spoon sauce over, and sprinkle with Parmesan (if using). Simmer for 2 minutes.
Serve hot with your favorite side. Enjoy!
