Garlic Butter Chicken Bites with Creamy Parmesan Pasta
Ingredients:
2 large chicken breasts, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon olive oil
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
8 ounces fettuccine pasta
1/4 cup fresh parsley, chopped (for garnish)

1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
2. In a large bowl, season the chicken pieces with salt, pepper, and garlic powder.
3. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant.
5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
6. Add the cooked fettuccine and chicken back into the skillet, tossing to coat everything in the creamy sauce.
7. Serve immediately, garnished with chopped parsley.
