Iced Lemon Lime Loaf
Ingredients:
For the loaf:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 tbsp lemon juice
2 tbsp lime juice
1 tbsp lemon zest
1 tbsp lime zest
1 tsp vanilla extract
½ cup buttermilk (or milk with 1 tsp vinegar added)
For the glaze:
1 cup powdered sugar
2 tbsp lemon juice
1 tbsp lime juice
1-2 tsp water (to thin it out, if needed)
Instructions:
Preheat oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan (8x4 or 9x5 inch).
Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream butter and sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
Add eggs and flavors: Add the eggs one at a time, beating well after each addition. Mix in the lemon juice, lime juice, lemon zest, lime zest, and vanilla extract.
Combine wet and dry ingredients: Add the dry ingredients in thirds, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.
Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Let the loaf cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Make the glaze: In a small bowl, whisk together the powdered sugar, lemon juice, lime juice, and water until smooth. If the glaze is too thick, add more water, a teaspoon at a time.
Glaze the loaf: Once the loaf has cooled, drizzle the glaze over the top.
