Garlic Herb Steak Bites with Creamy Rotini Alfredo
Ingredients:
For the Steak Bites:
1.5 lbs sirloin steak, cut into 1-inch cubes
2 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
2 tbsp Cajun seasoning
1 tbsp smoked paprika
1 tsp dried thyme
1/2 tsp black pepper
Salt to taste
For the Creamy Rotini Alfredo:
1 lb rotini pasta
6 tbsp butter
4 cloves garlic, minced
3 cups heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1/2 tsp salt
1/4 tsp ground nutmeg
Chopped chives for garnish
Directions:
1. Prepare the Steak Bites: In a large bowl, toss the steak cubes with olive oil, Cajun seasoning, smoked paprika, thyme, black pepper, and salt. Ensure the steak is evenly coated.
2. Sear the Steak: Heat a large skillet over medium-high heat. Add butter and let it melt. Add the minced garlic and sauté for about 30 seconds until fragrant.
3. Add the steak cubes to the skillet, ensuring not to overcrowd. Sear the steak for about 2-3 minutes per side, until golden brown and cooked to your desired doneness (medium-rare to medium is recommended). Remove the steak bites from the skillet and set aside.
4. Cook the Pasta: While the steak is searing, cook the rotini pasta according to package directions until al dente. Drain the pasta, reserving about 1 cup of pasta water.
5. Make the Alfredo Sauce: In the same skillet used for the steak, melt the remaining butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
6. Pour in the heavy cream and bring to a simmer. Reduce the heat to low and let it simmer for about 5 minutes, stirring occasionally, until the cream thickens slightly.
7. Stir in the Parmesan cheese and mozzarella cheese until melted and smooth. Add salt and nutmeg. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
8. Combine and Serve: Add the cooked rotini pasta to the skillet with the Alfredo sauce. Toss to coat the pasta evenly.
9. Gently fold in the seared steak bites into the creamy pasta.
10. Garnish with chopped chives and serve immediately.
