🛒 Ingredients
For the Salad:
🐔 2 chicken breasts
🧂 1 tsp salt
⚫ ½ tsp black pepper
🫒 1 tbsp olive oil
🥬 4 cups mixed lettuce leaves
🍅 1 cup cherry tomatoes, halved
🥒 ½ cucumber, sliced
🧅 ½ red onion, thinly sliced
🌿 Fresh dill & parsley, for garnish
For the Dressing:
🥛 ½ cup Greek yogurt
🍋 Juice of ½ lemon
🧄 1 small garlic clove, minced
🫒 1 tbsp olive oil
🌿 2 tbsp fresh dill, chopped
🌿 1 tbsp parsley, chopped
🧂 Salt & pepper to taste
👨🍳 Instructions
Prepare chicken: Rub chicken with olive oil, salt, and pepper. Grill or pan-sear 6–7 minutes per side until golden and fully cooked. Rest for 5 minutes, then slice.
Mix dressing: In a bowl, combine yogurt, lemon juice, garlic, olive oil, dill, parsley, salt, and pepper until creamy.
Assemble salad: Arrange lettuce, tomatoes, cucumber, and red onion in bowls. Top with sliced chicken.
Finish: Drizzle herb yogurt dressing over the top and garnish with extra herbs. Serve immediately.
