Texas-Style Smoked Brisket Sandwich

3 lbs (1.4kg) beef brisket (flat cut)
2 tbsp kosher salt
2 tbsp black pepper
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp cayenne pepper (optional, for heat)
Wood chips (hickory or oak), for smoking
For the Sautéed Onions:
2 large onions, sliced
2 tbsp unsalted butter
1 tbsp olive oil
Salt and black pepper, to taste
For the Sandwich:
4 brioche or potato buns, split and toasted
1/2 cup (75g) sliced pickles
1/4 cup (10g) fresh chives or parsley, chopped (for garnish)
BBQ sauce (optional, for serving)
Instructions
1. Prepare and Smoke the Brisket:In a bowl, mix the kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne (if using). Rub the mixture evenly over the brisket. Let it sit at room temperature for 1 hour, or refrigerate overnight for best results.
Preheat your smoker to 225°F (110°C) using hickory or oak wood chips.
Place the brisket in the smoker, fat side up, and smoke for 6-8 hours, or until the internal temperature reaches 195°F (90°C) and the brisket is tender.
Wrap the brisket in butcher paper or foil and let it rest for 1 hour. Slice half of the brisket against the grain into thin slices, and shred the other half.
2. Sauté the Onions:In a large skillet, heat the butter and olive oil over medium heat.
Add the sliced onions, season with salt and pepper, and cook for 15-20 minutes, stirring occasionally, until caramelized and golden brown. Set aside.
3. Assemble the Sandwiches:Place the toasted bun bottoms on a plate.
Layer each bun with a mix of sliced and shredded brisket, ensuring a good balance of tender slices and juicy shredded pieces.
Top the brisket with a generous portion of sautéed onions and sliced pickles.
Garnish with chopped chives or parsley, and add a drizzle of BBQ sauce if desired.
Add the bun tops and secure with a toothpick if needed.
