Lemon Parfaits
Ingredients:
1 cup graham cracker crumbs
3 tablespoons melted butter
2 tablespoons sugar
1 box (3.4 oz) instant lemon pudding mix
2 cups cold milk
1 cup whipped topping (like Cool Whip), plus more for layering
Extra graham crumbs for garnish (optional)
Directions:
In a bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until mixture resembles wet sand.
Press 2 tablespoons of the crust mixture into the bottom of each small plastic cup or dessert glass. Set aside.
In another bowl, whisk the lemon pudding mix and milk together for 2 minutes until thickened.
Gently fold in 1 cup of whipped topping into the pudding to lighten it.
Spoon or pipe the lemon filling over the crust layer in each cup.
Top with a generous layer of whipped topping and sprinkle with extra graham cracker crumbs for garnish.
Chill for at least 1 hour before serving.
