🥐 Cinnamon Roll Muffins 🧁
🧾 Ingredients:
For the Muffins:
2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup whole milk
1 large egg
1 teaspoon vanilla extract
For the Cinnamon Filling:
1/4 cup brown sugar, packed
2 teaspoons ground cinnamon
2 tablespoons unsalted butter, melted
For the Cream Cheese Glaze:
2 ounces cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
1–2 tablespoons milk (as needed)
🔪 Instructions:
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
In a medium bowl, whisk together flour, sugar, baking powder, and salt .
In another bowl, combine melted butter, milk, egg, and vanilla , mixing until well blended.
Add the wet ingredients to the dry and stir just until combined—do not overmix.
For the filling, mix brown sugar and cinnamon in a small bowl. Stir in melted butter to create a thick paste.
Spoon about 2 tablespoons of batter into each muffin cup. Add a generous teaspoon of cinnamon mixture on top, then cover with another 2 tablespoons of batter.
Bake for 18–22 minutes , or until a toothpick inserted comes out clean.
While muffins cool, prepare the glaze: beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla , adding milk as needed to reach a drizzle-friendly consistency.
Once muffins are completely cooled, drizzle the glaze generously over the tops.
