Ingredients:
- 2 cups of peeled and finely chopped apples (Granny Smith or Honeycrisp are great options)
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon all-purpose flour
- 1 package (containing 2 sheets) refrigerated pie crust, softened
- 1 beaten egg (for egg wash)
- Optional: coarse sugar for topping

Instructions:
1. Preheat your oven to 375°F (190°C) and lightly grease a standard muffin tin.
2. In a medium bowl, mix the diced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour until everything is well incorporated. Set aside.
3. Roll out the pie crusts and use a round cutter (approximately 3.5–4 inches) to cut out circles. Press each circle into the muffin cups to create the base for your mini pies.
4. Spoon the apple mixture into each crust, distributing it evenly among all cups.
5. Use any leftover dough to roll out and cut into small shapes or strips to create lattice tops or full covers for each pie. Ensure to gently seal the edges with your fingers.
6. Brush the tops with the beaten egg and, if you like, sprinkle with coarse sugar.
7. Bake for 20–25 minutes, or until the crusts turn golden and the filling begins to bubble.
8. Allow cooling in the pan for 10 minutes before carefully removing. Enjoy warm or at room temperature!
