Creamy Cilantro Shrimp Penne

Herb-Infused Shrimp Penne in Cilantro Cream Sauce

Ingredients:

12 oz penne pasta

1 lb shrimp, peeled and deveined

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup coconut milk

1/2 cup Greek yogurt

1/2 cup fresh cilantro, finely chopped

Juice of 1 lime

1/2 tsp ground cumin

Salt and pepper, to taste

1/4 tsp chili flakes (optional, for spice)

Fresh cilantro leaves and lime wedges, for garnish

Directions:

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent, about 3-4 minutes.

Stir in garlic and cook for 1 minute until fragrant.

Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes, flipping halfway through. Remove shrimp and set aside.

Lower the heat and add coconut milk and Greek yogurt to the skillet, stirring until smooth.

Add chopped cilantro, lime juice, cumin, salt, pepper, and chili flakes (if using). Simmer for 3-5 minutes until slightly thickened.

Return shrimp to the pan and stir in the cooked pasta. Toss until everything is well coated.

Garnish with fresh cilantro and lime wedges before serving.
