Ingredients:
โ€ข 1 large eggplant (about 1lb or 450g)
โ€ข 1/2 cup breadcrumbs (60g)
โ€ข 1/4 cup grated Parmesan cheese (25g)
โ€ข 1 egg
โ€ข 1 clove garlic, minced
โ€ข 2 tbsp chopped parsley (10g)
โ€ข Salt and pepper, to taste
โ€ข Olive oil, for frying

Instructions:
1. Peel and dice the eggplant. Boil in salted water until tender, then drain and mash.
2. Mix the mashed eggplant with breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper.
3. Shape into small balls and fry in hot olive oil until golden.
