Rich, Creamy Marry Me Chicken Bowtie Pasta
Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 (10 oz) package of bowtie pasta
1/2 cup sun-dried tomatoes, oil-packed, drained
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese, plus more for garnish
2 tbsp fresh basil, chopped, for garnish
Salt and freshly ground black pepper to taste
Directions:
1. Cook the Pasta: Cook the bowtie pasta according to package directions until al dente. Drain and set aside.
2. Sear the Chicken: Season the chicken pieces with salt, pepper, and half of the Italian seasoning. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. Sauté Vegetables: In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and chopped red bell pepper and cook for another 2-3 minutes until fragrant and slightly tender.
4. Combine and Simmer: Stir in the sun-dried tomatoes, remaining Italian seasoning, and red pepper flakes (if using). Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
5. Create the Creamy Sauce: Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Simmer for 2-3 minutes, or until the sauce has thickened slightly and the cheese is melted and smooth.
6. Add Chicken and Pasta: Return the cooked chicken to the skillet. Add the cooked bowtie pasta to the sauce. Toss everything together to coat evenly.
7. Garnish and Serve: Garnish with fresh basil and additional Parmesan cheese. Serve immediately while hot and creamy.
