🍪 Strawberry Cake Mix Cookies 🍓
Ingredients
1 box (15.25 oz) strawberry-flavored cake mix
1/2 cup all-purpose flour
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup white chocolate chips (optional)
1/4 cup freeze-dried strawberries, crushed (optional, for added flavor and texture)
Instructions
Step 1: Preheat and Prepare
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
Step 2: Mix the Dough
In a large mixing bowl, combine the cake mix and flour. Stir until evenly blended.
Add the melted butter, eggs, and vanilla extract to the dry ingredients. Mix until a soft dough forms. If using, fold in the white chocolate chips and crushed freeze-dried strawberries.
Step 3: Shape the Cookies
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
Gently press down on each cookie with the back of a spoon or your fingers to slightly flatten them.
Step 4: Bake
Bake in the preheated oven for 8-10 minutes, or until the edges are set and the centers are just barely firm. Avoid overbaking to keep the cookies soft and chewy.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
