Slow Cooker Beef Tips and Noodles Recipe
Ingredients:
2 lbs beef stew meat, cut into 1-inch cubes
1 tbsp olive oil
1 yellow onion, chopped
2 cloves garlic, minced
8 oz cremini mushrooms, sliced
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp salt
1/4 tsp black pepper
Paprika (1 tsp)
Tomato paste (2 tbsp)
3 tbsp all-purpose flour
4 cups beef broth
1 tbsp Worcestershire sauce
1 bay leaf
12 oz egg noodles
1/4 cup sour cream
2 tbsp chopped fresh parsley, for garnish
Directions:
Sear the beef: In a large skillet, heat olive oil over medium-high heat. Add the beef stew meat in batches, searing until browned on all sides. Transfer the browned beef to the slow cooker.
Sauté the aromatics: In the same skillet, add the chopped onion and garlic, cooking for about 2-3 minutes until softened. Add the sliced mushrooms and cook for an additional 3-4 minutes. Stir in the paprika, thyme, rosemary, salt, and pepper. Add the tomato paste and flour, stirring to coat the vegetables and create a roux.
Combine the ingredients: Transfer the sautéed mixture to the slow cooker with the beef. Add the beef broth, Worcestershire sauce, and bay leaf. Stir everything together until well combined.
Cook in the slow cooker: Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the beef is tender.
Prepare the noodles: About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.
Finish the dish: Once the beef is tender, stir in the cooked egg noodles and sour cream. Let it cook for an additional 5-10 minutes to heat everything through.
