🇮🇹 Pappa al Pomodoro ❤️
A rustic Tuscan bread and tomato soup—rich, hearty, and incredibly comforting!
Ingredients:
4 large ripe tomatoes, chopped (about 800 g)
2 cups stale bread, cubed (about 150 g)
60 ml olive oil (1/4 cup)
2 garlic cloves, minced
500 ml vegetable broth
Salt and black pepper, to taste
Fresh basil, to garnish
Instructions:
🍅 Heat olive oil in a saucepan, then add garlic and cook until fragrant.
🫓 Stir in tomatoes and cook until soft (10–15 minutes).
💧 Add bread cubes and broth. Simmer for 20 minutes, stirring occasionally.
🧂 Season with salt and pepper. The bread should dissolve into the soup.
🌿 Serve with a drizzle of olive oil and fresh basil on top.
