Smoked Jalapeño Popper Chicken Bombs

Ingredients:

4 boneless, skinless chicken breasts
4 oz cream cheese, softened
1 cup shredded cheddar cheese
2 jalapeños, deseeded and finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
8–10 slices of bacon
BBQ seasoning or rub (optional)
Toothpicks
BBQ sauce for brushing (optional)
Directions:

Preheat your smoker to 250°F (120°C).
In a bowl, mix cream cheese, shredded cheddar, jalapeños, garlic powder, onion powder, salt, and pepper.
Pound each chicken breast to an even thickness and make a slit to create a pocket.
Stuff each chicken breast with the cream cheese mixture, then wrap tightly with 2–3 slices of bacon. Secure with toothpicks.
Sprinkle BBQ rub or seasoning over the bacon-wrapped chicken bombs if desired.
Place in the smoker and cook for 2–2.5 hours, or until the internal temperature reaches 165°F (74°C).
Optional: During the last 15 minutes, brush with BBQ sauce for a caramelized glaze.
Let rest for 5 minutes before serving.
