Ingredients:
For the Cake:
2 cups (250 g) all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup (225 g) unsalted butter, softened
1 3/4 cups (350 g) granulated sugar
4 large eggs
1 tsp vanilla extract
1/2 cup (120 ml) canned coconut milk
1/2 cup (120 ml) crushed pineapple, drained
For the Glaze:
1 cup (120 g) powdered sugar
2-3 tbsp pineapple juice
1/4 cup (60 g) diced pineapple (for garnish)
2 tbsp shredded coconut (optional, for garnish)
Instructions:
Preheat & Prep:
Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or loaf pan.
Mix Dry Ingredients:
In a bowl, whisk together flour, baking powder, and salt.
Cream Butter & Sugar:
In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Combine Wet & Dry:
Gradually add the dry ingredients to the butter mixture, alternating with the coconut milk. Stir in the crushed pineapple.
Bake:
Pour the batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes, then turn out onto a wire rack to cool completely.
Prepare the Glaze:
In a bowl, whisk together powdered sugar and pineapple juice until smooth.
Decorate & Serve:
