These adorable Neapolitan cupcakes feature rich chocolate cake topped with a swirl of strawberry and vanilla buttercream and mini chocolate ice cream cone toppers. Perfect for high altitude baking!

Ingredients
For the Cupcakes:

1 recipe Chocolate Cupcakes (espresso powder optional)
For the Buttercream:

3x recipe American Vanilla Buttercream
1/2 oz freeze-dried strawberries, finely crushed
1 tbsp heavy whipping cream or whole milk
For Assembly:

Mini chocolate ice cream cones
Small amount of chocolate buttercream (for cone decoration)
Equipment
Cupcake Pan + 15 Paper Liners
Stand Mixer with Paddle Attachment
16-inch Piping Bag
Two 12-inch optional, for ice cream cone decoration)
Instructions
Prepare the Cupcakes:

Follow the recipe for chocolate cupcakes. Bake and cool completely before frosting.
Prepare the Buttercream:

Make 3 times the amount of American vanilla buttercream. For a whiter buttercream, you can substitute half the butter with vegetable shortening.
Divide the buttercream evenly between two bowls.
Add the finely crushed freeze-dried strawberries and the heavy whipping cream to one bowl of buttercream. Mix until well combined.
Assemble the Buttercream:

Fill two 12-inch piping bags halfway with the vanilla and strawberry buttercream. Snip off the tips of the bags.
Fit a 16-inch piping bag. Place the two smaller piping bags inside the larger one so that the vanilla and strawberry buttercream are side by side.
Pipe the buttercream onto the cooled cupcakes, alternating the two colors as you go. Refill the piping bags as needed.
Decorate the Ice Cream Cones:

Small amount of leftover chocolate buttercream to pipe little swirls on top of the mini ice cream cones.
The cones should not be placed on the cupcakes until you are ready to serve, as they will absorb moisture from the cake.
High Altitude Adjustments: This recipe is developed for high altitude at 5,280 feet. If baking at a different elevation, adjustments may be necessary.
Ensure the cupcakes are completely cool before frosting to prevent the buttercream from melting.
