Savory Rigatoni with Sausage, Spinach & Tomato Sauce 🍝🌿

Ingredients:
12 oz (340 g) rigatoni pasta
1 tbsp olive oil
1 lb (450 g) Italian sausage (casings removed)
3 cloves garlic, minced
1 can (14 oz) crushed tomatoes
1 tsp Italian seasoning
Salt & black pepper to taste
3 cups fresh spinach
1/4 cup grated Parmesan cheese
Optional: red pepper flakes, for heat
Instructions:
Cook the rigatoni in salted water until al dente. Meanwhile, heat olive oil in a large skillet and cook sausage, breaking it apart, until browned. Add garlic and sauté for 1 minute. Stir in crushed tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes. Add spinach and cook until wilted. Toss in the cooked pasta and stir well to coat. Serve topped with Parmesan and optional chili flakes.
