Crispy Baked Spicy Buffalo Chickpea Bites – Vegan & Delicious 🔥🧡✨

Ingredients
1 can (15 oz / 425g) chickpeas, rinsed, drained, and patted VERY dry
1 tbsp (15ml) olive oil or avocado oil
1/2 tsp garlic powder
1/4 tsp salt
2-4 tbsp (30-60ml) vegan Buffalo-style hot sauce (adjust amount based on desired heat and sauce thickness)
Optional for serving: Vegan ranch dip, celery sticks, carrot sticks

Directions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Ensure chickpeas are thoroughly dried with paper towels – this is key for crispiness. Remove any loose skins.
3. In a medium bowl, toss the dried chickpeas with the olive oil, garlic powder, and salt until evenly coated.
4. Spread the chickpeas in a single layer on the prepared baking sheet.
5. Bake for 20-25 minutes, shaking the pan occasionally, until the chickpeas are slightly firm and starting to get golden.
6. While chickpeas are baking, place your desired amount of vegan Buffalo sauce in a large bowl (large enough to toss the chickpeas).
7. Remove the chickpeas from the oven. Immediately transfer the hot chickpeas to the bowl with the Buffalo sauce.
8. Toss gently until all chickpeas are evenly coated in the sauce.
9. Spread the coated chickpeas back onto the parchment-lined baking sheet in a single layer.
10. Return to the oven and bake for another 5-10 minutes, or until the sauce is slightly dried onto the chickpeas and they are crispy. Watch carefully to prevent burning, especially the sauce.
11. Let the Buffalo chickpeas cool slightly on the baking sheet; they will crisp up more as they cool.
