#### Ingredients:
For the Stuffed Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- ½ cup sun-dried tomatoes, chopped
- 4 oz cream cheese, softened
- ½ cup shredded mozzarella cheese
- 1 tsp garlic powder
- 1 tsp Tony Chachere’s Creole Seasoning (plus extra for coating)
- 2 tbsp olive oil
For the Cream Sauce:
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp Tony Chachere’s Creole Seasoning
- ½ tsp garlic powder
- ¼ cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
#### Instructions:
1. Prepare the Filling:
- In a bowl, mix cream cheese, mozzarella, spinach, sun-dried tomatoes, garlic powder, and 1 tsp Tony Chachere’s.
2. Stuff the Chicken:
- Cut a pocket into each chicken breast (be careful not to cut all the way through).
- Stuff each breast with the filling and secure with toothpicks if needed.
- Rub the outside with olive oil and sprinkle generously with Tony Chachere’s.
3. Grill the Chicken:
- Preheat grill to medium-high heat (375°F-400°F).
- Grill chicken for 6-7 minutes per side, or until internal temp reaches 165°F.
- Let rest for 5 minutes before slicing.
4. Make the Cream Sauce:
- In a saucepan, melt butter over medium heat.
- Add heavy cream, Tony Chachere’s, and garlic powder. Simmer 3-4 minutes.
- Stir in Parmesan cheese until melted. Finish with parsley.
5. Serve:
- Drizzle the creamy sauce over the grilled stuffed chicken.
- Great with mashed potatoes, grilled veggies, or pasta.
