Effortless Pecan Pie Bars with Buttery Shortbread Crust
Ingredients:
1 cup all-purpose flour
1/2 cup unsalted butter, melted
1/4 cup powdered sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1/4 teaspoon salt
1 1/2 cups chopped pecans
Directions:
Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.
In a medium bowl, mix together 1 cup flour, melted butter, and powdered sugar until combined into a soft dough.
Press the dough evenly into the bottom of the prepared baking pan to form the crust.
Bake the crust for 15 minutes until just lightly golden. Remove from oven and set aside.
In a separate bowl, whisk together the brown sugar, eggs, vanilla, remaining 1 tablespoon flour, and salt until smooth.
Stir in the chopped pecans and pour this filling mixture over the warm crust.
Return the pan to the oven and bake for another 25–30 minutes, or until the center is set and the top is golden brown.
Cool completely in the pan, then cut into bars. Serve as is or slightly warmed with a scoop of vanilla ice cream.
