3/4 cup (150g) dark chocolate chips π«
Fresh strawberries (for topping) π
Chocolate chips (for topping) π«
Drizzled melted chocolate (for topping) π«
Directions:
1. Get started by crushing those chocolate cookies into fine crumbs using a food processor. Mix them with the melted butter until you have a lovely, combined crumb mixture. Press this into the bottom of a 9-inch springform pan and pop it in the fridge to chill for 20 minutes.
2. Now, let's make that creamy cheesecake filling! In a large bowl, beat together the softened cream cheese and powdered sugar until smooth. Next, add in the melted chocolate and vanilla extract, mixing until creamy and dreamy.
3. In another bowl, whip the heavy cream until you see soft peaks forming. Gently fold this whipped cream into your cheesecake mixture. For a fruity twist, gently fold in the sliced strawberries and chocolate chips. Spread this delightful filling evenly over the chilled crust, and let it chill for at least 4 hours, or even better, overnight.
4. Time for the ganache! Heat up the heavy cream in a saucepan until it starts to simmer. Pour it over the dark chocolate chips, let it sit for 5 minutes, then stir until itβs smooth and glossy. Pour this luscious ganache over the chilled cheesecake and spread it evenly.
5. The final touch β decorate! Arrange fresh strawberries on top, sprinkle some chocolate chips, and drizzle with melted chocolate for that extra wow factor. Chill for another 30 minutes before slicing into your masterpiece.
Enjoy your delicious creation!
