π Ingredients:
1 cup orzo pasta
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
2 tbsp tomato paste
1 tsp dried oregano
Salt and pepper to taste
Β½ cup cherry tomatoes, halved
Fresh basil & crumbled feta (for garnish) πΏπ§
Meatballs:
1 lb (450 g) ground beef
1 egg
ΒΌ cup breadcrumbs
2 tbsp grated Parmesan
1 garlic clove, minced
Salt, pepper, dried oregano
π¨βπ³ Instructions:
Cook orzo according to package instructions. In a bowl, mix all meatball ingredients and form small balls. Pan-fry or bake until browned and cooked through. In a skillet, heat olive oil, sautΓ© onion and garlic until soft. Add diced tomatoes, tomato paste, oregano, cherry tomatoes, salt, and pepper. Simmer 10 minutes. Stir in orzo and meatballs. Serve hot, topped with basil and feta!
