Amish Apple Fritter Bread

Ingredients:

2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
2/3 cup granulated sugar
2 large eggs
1/2 cup sour cream
1 tsp vanilla extract
2 cups apples, peeled and chopped (preferably Honeycrisp or Granny Smith)
1/4 cup brown sugar
1 tsp ground cinnamon

Glaze:
1/2 cup powdered sugar
1 tbsp milk
1/4 tsp vanilla extract

Directions:

Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a bowl, mix flour, baking powder, baking soda, and salt. Set aside.
In another bowl, cream together butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in sour cream and vanilla.
Gradually add the dry ingredients to the wet until just combined.
In a small bowl, toss the chopped apples with brown sugar and cinnamon.
Pour half the batter into the loaf pan, layer with half the apple mixture, then repeat. Gently swirl with a knife for a marbled effect.

Bake for 55–65 minutes, or until a toothpick comes out clean. Let cool in pan 10 minutes, then transfer to a wire rack.

For the glaze, whisk powdered sugar, milk, and vanilla until smooth, then drizzle over cooled loaf.
