1/4 cup shallots, finely chopped 🧅

Prepare the Steaks:

Press the crushed peppercorns into both sides of the steaks, seasoning with a little salt.
Heat olive oil in a skillet over medium-high heat. Add the steaks and cook to your preferred doneness (3-4 minutes per side for medium-rare). Remove steaks and set aside.
Make the Sauce:

In the same skillet, melt butter and sauté the shallots until translucent.
Carefully add brandy (or cognac), and let it reduce for 1-2 minutes. Add beef stock, Dijon mustard, and cream, stirring to combine. Simmer until the sauce thickens, about 3-4 minutes.
Finish the Dish:

Return the steaks to the skillet and coat them in the sauce. Allow the steaks to rest in the sauce for another minute.
Serve:

Plate the steaks, pour the sauce over them, and garnish with fresh thyme. Serve with your favorite side dish.
