Ingredients
For the Gyro Filling:

- 1/2 tsp oregano
- Salt and pepper to taste

For the Tzatziki Sauce:
- 1 cup unsweetened coconut yogurt
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1/4 cup grated cucumber, squeezed to remove excess water
- 1 tbsp chopped dill
- Salt and pepper to taste

For the Wrap:
- 4 pita breads
- 1 cup shredded lettuce
- 1/2 cup sliced tomatoes
- 1/4 cup sliced red onions

Directions
1. Heat olive oil in a skillet and sauté seitan with smoked paprika, garlic powder, oregano, salt, and pepper until golden and slightly crispy.
2. Mix all tzatziki sauce ingredients in a bowl and set aside.
3. Assemble gyros by layering seitan, lettuce, tomatoes, onions, and tzatziki sauce in warm pita bread.
