Maple Pecan Roasted Acorn Squash
Ingredients:
- 2 acorn squash, halved and seeds removed
- 4 tbsp unsalted butter
- 4 tbsp pure maple syrup
- 1/3 cup pecans, toasted and chopped
- Sea salt to taste (optional)
Directions:
1. Preheat oven to 400°F (200°C).
2. Place the acorn squash halves cut side up on a baking sheet.
3. In a small saucepan, melt the butter over low heat and stir in the maple syrup until combined.
4. Brush the maple butter mixture generously over the cut sides of the squash.
5. Sprinkle the toasted pecans evenly over the squash halves.
6. Roast in the oven for 40-45 minutes, or until the squash is tender and caramelized.
7. Remove from oven and season with sea salt if desired before serving.
