Mexican Lasagna
Ingredients
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 jar (16 oz) salsa
- 12 corn tortillas
- 2 cups Mexican blend cheese, shredded
- 1 can (10 oz) enchilada sauce
Instructions
1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Cook Meat: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
3. Season: Add taco seasoning according to the packet instructions. Stir in the black beans, corn, and half of the salsa. Cook until heated through.
4. Layer: In a baking dish, spread a thin layer of enchilada sauce on the bottom. Place a layer of tortillas, overlapping slightly. Spread half of the meat mixture over the tortillas. Sprinkle with cheese.
5. Repeat Layers: Add another layer of tortillas, the remaining meat mixture, and more cheese. Top with the remaining tortillas.
6. Top: Pour the remaining enchilada sauce and salsa over the top layer of tortillas. Sprinkle with the remaining cheese.
7. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
8. Serve: Let it cool for a few minutes before slicing. Enjoy with toppings like sour cream, avocado, or cilantro if desired.
