Maple Pecan Roasted Acorn Squash
Ingredients:
- 2 acorn squashes, halved and seeded
- 3 tablespoons pure maple syrup
- 2 tablespoons olive oil
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup pecan halves
- Salt and freshly ground black pepper to taste
Directions:
1. Preheat oven to 400°F (200°C).
2. In a small bowl, whisk together maple syrup, olive oil, cinnamon, nutmeg, salt, and pepper.
3. Place the acorn squash halves cut side up on a baking sheet lined with parchment paper.
4. Brush the maple syrup mixture generously over the flesh of the squash.
5. Sprinkle the pecan halves evenly over the squash.
6. Roast in the oven for 40-45 minutes, or until the squash is tender and the pecans are toasted and golden.
7. Remove from the oven and let cool slightly before serving.
