Pork Chop Supreme
Ingredients:
4 bone-in pork chops, about 1-inch thick
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon olive oil
1 medium onion, thinly sliced
1 can (10.5 ounces) condensed cream of mushroom soup
1/2 cup chicken broth
1/2 cup sour cream
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1/2 teaspoon paprika
1 cup sliced mushrooms
1/4 cup chopped fresh parsley for garnish (optional)
Directions:
Preheat your oven to 350°F. Lightly grease a 9x13-inch baking dish and set it aside.
Season the pork chops on both sides with salt, black pepper, garlic powder, and onion powder. Rub the seasonings into the meat to ensure they're well coated.
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the pork chops and sear them for about 3-4 minutes on each side, or until they're nicely browned. You're not cooking them through here, just getting a good sear. Remove the chops from the skillet and place them in the prepared baking dish.
In the same skillet, add the sliced onion and cook for about 2-3 minutes, or until they start to soften. Stir in the sliced mushrooms and continue to cook for another 3-4 minutes until the mushrooms are tender.
In a medium bowl, whisk together the cream of mushroom soup, chicken broth, sour cream, Worcestershire sauce, dried thyme, and paprika until smooth. Pour this mixture over the pork chops in the baking dish, making sure they're well covered.
Spread the cooked onions and mushrooms evenly over the top of the pork chops. This will add a nice layer of flavor and keep the chops moist as they bake.
Cover the baking dish with aluminum foil and bake in the preheated oven for about 45-50 minutes, or until the pork chops are cooked through and tender. You can check for doneness by inserting a meat thermometer into the thickest part of a chop; it should read at least 145°F.
Once done, remove the foil and let the pork chops rest for about 5 minutes. This allows the juices to redistribute throughout the meat, making each bite juicy and flavorful.
Garnish with freshly chopped parsley if you like a bit of color and freshness. Serve these Pork Chop Supremes with your favorite sides, like mashed potatoes or steamed vegetables, and enjoy a hearty, comforting meal.
