Spicy Cajun Chicken Tortellini in Garlic Velveeta Alfredo Cheese Sauce
Ingredients:
1 pound chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon garlic powder
1/2 teaspoon paprika
1 pound cheese tortellini, fresh or frozen
4 tablespoons butter
4 cloves garlic, minced
1 (16 ounce) package Velveeta cheese, cubed
1 cup heavy cream
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
Salt and pepper to taste
Directions:
1. In a bowl, toss the chicken pieces with olive oil, Cajun seasoning, garlic powder, and paprika. Make sure the chicken is evenly coated.
2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 6-8 minutes. Set aside.
3. Cook the tortellini according to package directions until al dente. Drain and set aside.
4. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
5. Add the cubed Velveeta cheese, heavy cream, and milk to the skillet. Stir continuously until the Velveeta is completely melted and the sauce is smooth and creamy.
6. Stir in the Parmesan cheese and mozzarella cheese until melted and the sauce is thick and glossy. Season with salt and pepper to taste.
7. Add the cooked tortellini to the cheese sauce and toss to coat evenly.
8. Gently fold in the cooked Cajun chicken into the cheesy tortellini.
9. Serve immediately, ensuring each portion has plenty of chicken and creamy, cheesy tortellini.
