Hawaiian Pineapple Cake
Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 large eggs
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 (20 oz) can crushed pineapple with juice (do not drain)
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp pineapple juice (from the can, for flavor)
For Garnish:
- Fresh pineapple chunks or rings
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
2. In a large bowl, combine the flour, sugar, and baking soda. Mix well.
3. Add eggs, vanilla extract, and the entire can of crushed pineapple with juice to the dry ingredients. Stir until just combined.
4. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
5. Remove from oven and let the cake cool completely in the pan on a wire rack.
6. While the cake cools, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
7. Gradually add powdered sugar, beating well after each addition.
8. Mix in vanilla extract and pineapple juice until the frosting reaches desired consistency and flavor.
9. Once the cake is completely cooled, spread the frosting evenly over the top.
10. Garnish with fresh pineapple chunks or rings as desired before serving.

Tips:
