Classic Homestyle Meatloaf with Buttery Mashed Potatoes
Ingredients:
For the Meatloaf:
1½ lbs ground beef (80/20)
1 cup breadcrumbs
1 egg
½ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
For the Glaze:
¼ cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
For the Mashed Potatoes:
2 lbs russet potatoes, peeled and cut into chunks
½ cup unsalted butter
¾ cup whole milk (warm)
Salt and pepper to taste
Fresh parsley (for garnish, optional)
Directions:
Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.
In a large bowl, mix together all meatloaf ingredients until just combined—do not overmix.
Shape into a loaf on the prepared sheet or place into a loaf pan.
In a small bowl, mix glaze ingredients and spread over the top of the meatloaf.
Bake for 50–60 minutes, or until internal temp reaches 160°F (71°C). Let rest 10 minutes before slicing.
Meanwhile, boil potatoes in salted water for 15–20 minutes until fork tender. Drain.
Mash with butter, warm milk, salt, and pepper until creamy and smooth.
Serve meatloaf slices alongside generous scoops of mashed potatoes. Garnish with parsley if desired.
