Creamy Garlic Parmesan Chicken with Spinach in One Pot
Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
5 ounces fresh spinach
Lemon wedges (optional, for serving)
Directions:
Sear the Chicken:
Season the chicken breasts with salt and pepper.
Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
Sear the chicken for 3-4 minutes per side, or until golden brown.
Remove the chicken from the skillet and set it aside.
Sauté Garlic:
Reduce the heat to medium.
Add the minced garlic to the skillet and cook for about 1 minute, or until fragrant.
Make the Creamy Sauce:
Pour the chicken broth and heavy cream into the skillet.
Stir in the Parmesan cheese, Italian seasoning, salt, and pepper.
Bring the sauce to a simmer and cook for 5-7 minutes, or until it thickens slightly.
Add Spinach and Chicken:
Add the fresh spinach to the skillet and stir until it wilts.
Return the chicken breasts to the skillet.
Simmer for another 5-7 minutes, or until the chicken is cooked through and the sauce has thickened to your preference.
Serve:
Serve the creamy garlic Parmesan chicken and spinach immediately.
Garnish with lemon wedges, if desired.
