Ham and Cheese Mashed Potato Cakes 🥔🧀
Ingredients:
2 cups mashed potatoes (cold or room temp)
1 cup diced ham
¾ cup shredded cheddar cheese (or any cheese you like)
1 large egg
¼ cup all-purpose flour (plus more if needed)
2 tablespoons chopped green onions (optional)
Salt and pepper to taste
Oil for pan frying (vegetable, canola, or olive oil)

Mix the ingredients:
In a large bowl, combine the mashed potatoes, ham, cheese, egg, flour, and green onions.
Season with salt and pepper to taste.
Form the cakes:
Scoop about ¼ cup of the mixture and shape into a patty or cake. If the mixture is too soft or sticky, add a bit more flour until it's easy to shape.
Heat the oil:
In a large skillet, heat a few tablespoons of oil over medium heat.
Cook the cakes:
Add the potato cakes to the skillet (don’t overcrowd the pan) and cook for about 3–4 minutes per side, or until golden brown and crispy.
Drain and serve:
Remove from pan and drain on a paper towel-lined plate. Serve warm with sour cream, mustard, or a dipping sauce of your choice.

Chopped parsley or chives
A sprinkle of paprika or garlic powder for extra flavor
Use leftover baked potatoes mashed up if you don’t have mashed potatoes ready
