Strawberry Cream Cheese Pie
Ingredients
For the cream cheese filling:
- 8 oz cream cheese, softened (regular or light)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup heavy whipping cream
For the strawberry topping:
- 2 cups fresh strawberries, hulled and sliced
- ¼ cup granulated sugar
- 1 tbsp cornstarch
- ¼ cup water
- 1 tsp lemon juice
For the crust:
- 1 ½ cups graham cracker crumbs
- 3 tbsp granulated sugar
- 6 tbsp unsalted butter, melted
Instructions
1. Prepare the crust: Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press the mixture into a 9-inch pie pan. Bake for 8-10 minutes, then let cool completely.
2. Make the cream cheese filling: In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Spread the filling evenly over the cooled crust.
3. Prepare the strawberry topping: In a small saucepan, combine sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring constantly until the mixture thickens. Remove from heat and stir in the sliced strawberries. Let cool slightly.
4. Assemble the pie: Spread the strawberry topping over the cream cheese layer. Refrigerate for at least 2-3 hours before serving.
5. Serve and enjoy! Garnish with whipped cream or extra strawberries if desired.
