Easy Homemade Savory Chickpea Flour Pancake (Herbed Socca) 💛😋
Ingredients:
1 cup (120g) chickpea flour
1 cup (240ml) lukewarm water
2 tablespoons olive oil, plus more for cooking
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons mixed fresh herbs, finely chopped (e.g., parsley, chives, thyme)
Optional: pinch of red pepper flakes
Directions:
1. In a mixing bowl, whisk the chickpea flour with salt and pepper.
2. Slowly pour in the lukewarm water while whisking continuously to create a smooth, thin batter without lumps.
3. Stir in 1 tablespoon of the olive oil and the chopped fresh herbs (and red pepper flakes, if using).
4. Cover the batter and let it rest at room temperature for at least 30 minutes (up to 2 hours is even better) to allow the flour to hydrate.
5. Preheat oven to 450°F (230°C). Place a 10-inch (25 cm) oven-safe skillet (preferably cast iron) in the oven to heat up for 10 minutes.
6. Carefully remove the hot skillet from the oven. Add the remaining 1 tablespoon of olive oil and swirl to coat the bottom.
7. Give the batter a final stir and pour it into the hot skillet.
8. Bake for 15-20 minutes, until the socca is firm, cooked through, and the edges are golden and crispy.
9. If desired, turn on the broiler (grill) for the last minute or two to get extra browning on top, watching very closely.
10. Remove from oven, let cool for a few minutes in the skillet, then slice into wedges and serve warm.
