Holiday Cooky Madness Day 4
SHIRLEY TEMPLE COOKIES #holidaytreats
3/4 cup shortening
3/4 cup sugar
3 large eggs, room temperature
1 teaspoon almond extract
3 cups all-purpose flour
3 teaspoons baking powder
dash of salt
ICING:
2-1/2 cups confectioners' sugar, or as needed
2 Tablespoons butter, melted
2 Tbsp. 7-UP
1 Tbsp. maraschino cherry juice
Maraschino Cherries
Preheat oven to 400° F.
In a mixing bowl, cream shortening and sugar until light and fluffy
Beat in eggs and almond extract
In a separate bowl whisk together flour, baking powder and salt; gradually add to creamed mixture and mix well
Using an ice cream/cookie scoop form dough into balls. Place 1 in. apart on ungreased cookie sheets
Bake 10-12 minutes or until lightly browned.
Allow to cool completely, and ice.
For icing, in a mixing bowl, cut butter into powdered sugar till crumbly
Add maraschino cherry juice, and 7-UP and mix till smooth and fluffy
Add more liquid or more powdered sugar as needed to reach desired consistency.
Frost each cookie and top with a maraschino cherry. Place on waxed paper; let stand until set.
