Ingredients:

For the Red Velvet Cake Crust:

1 ½ cups all-purpose flour

1 tbsp cocoa powder

1 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tbsp red food coloring

1/2 cup buttermilk

1 tbsp white vinegar

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

2 tsp vanilla extract

3 large eggs

1/4 cup sour cream

1/4 cup heavy cream

For the Strawberry Topping:

1 ½ cups fresh strawberries, sliced

2 tbsp sugar

1 tbsp lemon juice

Instructions:

Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
⏱️ Prep Time: 5 minutes

In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
⏱️ Mixing Dry Ingredients: 2 minutes

In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, vanilla, and food coloring, mixing well.
⏱️ Mixing Time: 4 minutes

Add dry ingredients in three additions, alternating with buttermilk, starting and ending with the dry ingredients. Stir in the vinegar.
⏱️ Batter Mixing Time: 5 minutes

Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean. Let the cake cool completely.
⏱️ Baking Time: 30 minutes

While the cake cools, prepare the cheesecake filling. Beat the cream cheese and sugar until smooth. Add vanilla, eggs one at a time, sour cream, and heavy cream. Mix until well combined.
⏱️ Filling Prep Time: 7 minutes

Pour the cheesecake filling over the cooled red velvet cake layer. Bake at 325°F (163°C) for 55–60 minutes, or until the center is almost set (it will firm up as it cools).
⏱️ Cheesecake Baking Time: 60 minutes

Let the cheesecake cool in the oven with the door cracked for 1 hour, then refrigerate for at least 4 hours or overnight.
⏱️ Cooling & Chilling Time: 5 hours

For the strawberry topping, toss the sliced strawberries with sugar and lemon juice. Let them sit for 20 minutes to release juices.
⏱️ Topping Prep Time: 20 minutes

Before serving, top the cheesecake with the macerated strawberries. Slice and enjoy the creamy, tangy goodness! 🍓❤️
