1/2 teaspoon salt

For the Cheese Filling:

1 1/2 cups ricotta cheese

2 cups shredded mozzarella cheese (divided)

1/4 cup grated Parmesan cheese

1 egg

1 tablespoon fresh parsley, chopped (plus more for garnish)

12 manicotti shells (or cannelloni pasta)

For Topping:

1/2 cup shredded mozzarella cheese

Instructions:

Cook the Pasta:

Preheat your oven to 375°F (190°C).

Cook the manicotti shells according to the package instructions until al dente. Drain and set aside to cool slightly.
