Baked Spinach Mushroom Quesadillas
Ingredients:
8 flour tortillas
2 cups fresh spinach, chopped
1 1/2 cups mushrooms, sliced
1 tablespoon olive oil
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
Cooking spray
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
Add mushrooms, salt, and pepper. Cook until mushrooms release their moisture and start to brown, about 5-7 minutes.
Stir in chopped spinach and cook for another 1-2 minutes, just until wilted. Remove from heat.
Lay out 4 tortillas on the prepared baking sheet. Evenly distribute the spinach and mushroom mixture over the tortillas.
Sprinkle mozzarella and cheddar cheeses over the filling.
Top with the remaining tortillas to form quesadillas. Lightly spray the tops with cooking spray.
Bake for 8-10 minutes, flipping halfway through, until the tortillas are golden and crispy.
Slice into wedges and serve warm.
