Hummingbird Bread with Cinnamon Cream Cheese Frosting
Ingredients:
For the Bread:
• 3 ripe bananas, mashed
• ½ cup granulated sugar
• ¼ cup brown sugar
• 2 large eggs
• ⅓ cup vegetable oil
• 1 teaspoon vanilla extract
• 1½ cups all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon cinnamon
• ½ teaspoon salt
• ½ cup crushed pineapple, drained
• ½ cup chopped pecans (optional)

For the Frosting:
• 4 oz cream cheese, softened
• 2 tablespoons unsalted butter, softened
• 1 cup powdered sugar
• ¼ teaspoon cinnamon
• ½ teaspoon vanilla extract
• Chopped pecans for garnish (optional)

Instructions:
1. Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
2. Mix Wet Ingredients:
In a large bowl, whisk together mashed bananas, sugar, brown sugar, eggs, oil, and vanilla.
3. Combine Dry Ingredients:
In another bowl, whisk together flour, baking soda, cinnamon, and salt.
4. Combine Everything:
Gradually add dry ingredients to wet mixture. Fold in crushed pineapple and pecans.
5. Bake:
Pour batter into the prepared loaf pan and bake for 55–65 minutes, or until a toothpick inserted comes out clean. Let it cool completely.
6. Prepare Frosting:
Beat cream cheese and butter until smooth. Add powdered sugar, cinnamon, and vanilla. Mix until creamy.
7. Frost and Serve:
Spread frosting over cooled bread. Garnish with extra pecans and a sprinkle of cinnamon if desired.
