Easy Comforting Cleansing Red Lentil Turmeric Soup Simple & Healthy Recipe π²β¨
Ingredients:
1 tablespoon (15ml) olive oil or coconut oil
1 onion chopped
2 carrots chopped
2 celery stalks chopped
2 cloves garlic minced
1 inch ginger grated
1 teaspoon ground turmeric
Β½ teaspoon ground cumin
ΒΌ teaspoon cayenne pepper optional
1 cup (200g) red lentils rinsed
6 cups (1.4L) vegetable broth
1 can (400g) crushed tomatoes
Salt and black pepper to taste
Fresh cilantro or parsley chopped for garnish
Directions:
1 Heat olive oil or coconut oil in a large pot or Dutch oven over medium heat. Add onion carrots and celery and cook until softened about 7-10 minutes.
2 Add garlic and ginger and cook for 1 minute until fragrant.
3 Stir in the turmeric cumin and cayenne if using. Cook for 30 seconds stirring constantly.
4 Add the rinsed red lentils vegetable broth and crushed tomatoes to the pot. Bring to a boil.
5 Reduce heat cover and simmer for 20-25 minutes or until the lentils are soft and have broken down creating a thick soup stirring occasionally to prevent sticking.
6 Season generously with salt and black pepper to taste.
7 If you prefer a smoother soup you can blend a portion of it using an immersion blender or carefully transfer to a regular blender.
8 Ladle the hot soup into bowls.
9 Garnish with fresh cilantro or parsley.
