🇮🇹 Pasta e Ceci (Pasta with Chickpeas)
A hearty, comforting bowl of pasta and chickpeas simmered in a rich, savory broth — classic Italian comfort food!
Ingredients:
• 250 g ditalini or small pasta
• 1 can (400 g) chickpeas, drained
• 2 cloves garlic, minced
• 1 onion, finely chopped
• 1 sprig rosemary
• 3 cups vegetable broth
• 2 tbsp tomato paste
• 3 tbsp olive oil
• Salt & pepper
• Grated Parmesan for serving
Instructions:
1. 🧄 Sauté garlic, onion, and rosemary in olive oil until fragrant.
2. 🍅 Stir in tomato paste, chickpeas, and broth; simmer 10 minutes.
3. 🍝 Add pasta directly into the pot, cook until tender.
4. 🧀 Serve hot with Parmesan and a drizzle of olive oil!
