Garlic Butter Parmesan Chicken Bites with Creamy Cajun Sauce

Ingredients:

2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
4 tablespoons butter
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil (for cooking)
For the Creamy Cajun Sauce:
1 cup heavy cream
2 tablespoons Cajun seasoning
1 tablespoon smoked paprika
1 tablespoon butter
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
1/4 cup grated Parmesan cheese

Directions:

1. Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
2. Add the chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
4. Add the grated Parmesan cheese to the skillet, stirring to combine with the garlic butter. Toss the cooked chicken pieces in the Parmesan mixture until well coated. Remove from heat and set aside.
5. For the creamy Cajun sauce, melt the butter in a separate saucepan over medium heat. Add the Cajun seasoning, smoked paprika, garlic powder, and onion powder, stirring to combine.
6. Pour in the heavy cream and bring the sauce to a simmer. Let it cook for 3-4 minutes until it thickens slightly. Stir in the Parmesan cheese and season with salt and pepper to taste.
7. Serve the garlic butter Parmesan chicken bites on a plate, drizzled with the creamy Cajun sauce.
