𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
Cheesecake Filling:
16 oz (450g) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
1/2 cup freshly squeezed lime juice (about 4 limes)
Zest of 2 limes
1 envelope (0.25 oz) unflavored gelatin (optional, for firmer texture)
Lime Mousse:
1 cup heavy cream
1/4 cup powdered sugar
1 tablespoon freshly squeezed lime juice
Lime zest for garnish
𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:
Prepare the Crust:
Preheat oven to 350°F (175°C).
Combine graham cracker crumbs, granulated sugar, and melted butter in a medium bowl.
Press mixture into the bottom of a springform pan to form an even layer.
Bake for 8-10 minutes. Let cool completely.
Make the Cheesecake Filling:
Beat cream cheese until smooth and creamy. Gradually mix in sugar and vanilla extract.
In a separate bowl, whip 1 cup of heavy cream to stiff peaks and gently fold into the cream cheese mixture.
Stir in lime juice and zest.
(Optional) Dissolve gelatin in 2 tablespoons of water, heat gently, and let cool slightly before folding into the filling.
Assemble the Cheesecake:
Pour the cheesecake filling over the cooled crust.
Smooth the top and refrigerate for at least 4 hours, or until set.
Prepare the Lime Mousse:
Whip heavy cream with powdered sugar to stiff peaks.
Fold in lime juice.
Spoon or pipe the mousse over the set cheesecake.
Garnish and Serve:
Garnish with lime zest for added flavor and a pop of color.
