Ingredients:

2 filet mignon steaks (6 oz each)
2 tbsp olive oil
Salt and black pepper, to taste
1 tbsp butter
2 garlic cloves, smashed
2 sprigs fresh thyme
For the Sauce:
1 tbsp butter
2 tbsp shallots, finely chopped
1/3 cup beef broth
1/3 cup heavy cream
1 tbsp Dijon mustard
1 tbsp green peppercorns, crushed
Instructions:
Prepare the Steak:
Pat steaks dry and season generously with salt and black pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 minutes per side until a crust forms.
Reduce heat, add butter, garlic, and thyme. Spoon the melted butter over the steaks. Cook to your desired doneness (medium-rare: 135°F). Remove and let rest.
Make the Sauce:
In the same skillet, melt butter over medium heat. Sauté shallots until softened.
Deglaze the pan with beef broth, scraping up browned bits. Let it simmer for 2 minutes.
Stir in heavy cream, Dijon mustard, and crushed peppercorns. Simmer until thickened, about 3 minutes.
Serve:
Plate the steaks, spoon the creamy peppercorn sauce over the top, and garnish with fresh parsley.
